Okra's natural mucilage makes this powder a gentle thickener. Whisk it into soups, dals and gravies for a silkier body and a mild, fresh-green flavour, or knead it into dough for soft, pale-green rotis.
Whisk 2 tsp okra powder into 2 tbsp cold water. Stir it into 2 cups of simmering tomato soup and cook for 2 minutes until it thickens.
A soft, mildly sweet powder that brings banana flavour wherever you want it. It blends into drinks, enriches porridge and swaps in for part of the flour when baking, without overripe bananas on the counter.
Stir 2 tbsp banana powder and a pinch of cardamom into a bowl of hot cooked oats. Top with chopped nuts and a drizzle of honey.
An earthy-sweet powder with a vivid magenta colour. A spoonful turns dough, batters, dips and drinks a cheerful pink, with no synthetic food colour needed.
Whisk 1 tsp beetroot powder into 1 cup of curd with roasted cumin, a pinch of salt and chopped mint. Serve chilled.
All the sweet, savoury depth of onion without peeling, chopping or watery eyes. It disperses evenly, so it's ideal for marinades, dips, spice blends and snack seasonings where chopped onion won't work.
Toss 2 cups of roasted makhana in 1 tsp warm ghee with ½ tsp onion powder, a pinch of chilli powder and chaat masala.
Dry ginger, known in Indian kitchens as sonth, has a warm, peppery heat that's slightly deeper than fresh ginger. It's a staple in masala chai and kadha, winter laddoos and sonth chutney, and works just as well in cookies and cakes.
Add ⅛ tsp ginger powder to chai while it simmers with tea leaves, milk and sugar. Strain and serve hot.
Rounded garlic flavour with no peeling or sticky fingers. Because it spreads evenly through butter, oil and dry spices, it's the shortcut to great garlic bread, tikka marinades and seasoning blends.
Mix ½ tsp garlic powder into 2 tbsp soft butter with chopped coriander. Spread on toast or pav and grill until golden.
Made from whole oranges, peel and all. You get the sweet-tangy fruit together with the fragrant, gently bitter-sweet zest, in a dry, easy-to-measure form. Stir it into drinks, fold it into cake and cookie batters, or dust it over desserts. Citrus flavour without zesting or squeezing.
Add 1 tsp orange powder to your usual chocolate mug-cake mix. Microwave as normal and finish with a pinch more on top.
Amla, the Indian gooseberry, has been part of Indian kitchens for generations. Its sharp, sour, slightly astringent taste works in cooling drinks, tangy chutneys and as a souring agent in rice, dal and chaat, all year round.
Stir ½ tsp amla powder into a glass of cold water with a pinch of black salt, roasted cumin and a little sugar. Add mint and ice.

Good powder starts with good produce. We make Nouriva at home in small quantities, and every batch goes through the same four careful steps.
We choose fresh fruits and vegetables suited to drying.
Produce is washed, trimmed and sliced so it dries evenly.
Moisture is carefully removed, concentrating flavour and colour.
The dried produce is finely ground and sealed to keep it fresh.
Every powder comes in four sizes. Start small to try a new flavour, or choose a larger pack for the ones you use every day.
